Why a single-cultivar matcha

Most matcha sold in the U.S. is a blend. Single-cultivar matcha (one tea plant variety, one harvest, one farm) gives you a more specific flavor — cleaner, sweeter, more tea-room than energy-drink. Okumidori in particular is the cultivar most often used for koicha (thick matcha) and high-end usucha. We source ours from Uji, Japan.

The difference between an 80-prong and 100-prong chasen is tangible in the finished bowl. More tines move more air into the matcha suspension, producing a finer-bubbled foam that holds at the surface longer. For koicha preparation — thick matcha — the 100-prong also distributes the powder more evenly during the slower stirring motion that thick tea requires. The chasen in this set is handcrafted bamboo; the tine arrangement is set by hand, and the tine count is marked on the handle ring.
